How I became an expert in vegan desserts...

Following in the footsteps of my grandmother, Carole, of Carole's Cheesecake Company, I created a new wave of cheesecake-inspired frozen desserts that everyone-- vegan or non-vegan-- could enjoy: Smart Cakes. 

.............   Childhood  .............

Ever since I was a little girl, my sister and I would visit my grandparents' cheesecake factory to spend time with family, eat award winning cakes, and play in their warehouse. Dessert for me came to symbolize family and the joy of sharing sweet experiences with the ones we love. 

.............   The Twist  .............

In my 20s, however, I developed sensitivities to dairy, soy and wheat, and was forced to completely change my diet. I became determined to marry my passion for dessert with a raw vegan lifestyle and spent years learning to craft artisanal vegan desserts.

 

I enrolled in a Culinary Nutrition Expert Program, gaining certification in Holistic Nutrition and spent several years managing a raw vegan restaurant in Guelph.

These experiences imbued me with an everlasting appreciation for organic food-- for its amazing taste, jam-packed vitamin and nutrient content, and environmental sustainability.

 

Today, my greatest joy is that I am able offer people with dietary restrictions the decadence they crave without the pain or guilt.
